Mexican Stuffed Peppers

This is a recipe that takes a little longer to make- but it makes 12 servings. What I normally do is make the stuffing, and freeze half of it. Making only 6 peppers at a time beaks up the recipe enough to keep you from getting bored with it. When  you are ready to make it again- just take out the stuffing to let it thaw. And- this yummy recipe coming in at $1.75 per serving!
