Mexican Stuffed Peppers


This is a recipe that takes a little longer to make- but it makes 12 servings. What I normally do is make the stuffing, and freeze half of it. Making only 6 peppers at a time beaks up the recipe enough to keep you from getting bored with it. When  you are ready to make it again- just take out the stuffing to let it thaw. And- this yummy recipe coming in at $1.75 per serving!



Feel free to add a dollop of sour cream to complete the meal (sour cream not included in cost break down nor nutritional value)


Price Breakdown:

  • white rice = .50¢
  • chicken broth = $1.63
  • mushrooms= .99¢
  • black beans= .99¢
  • refried beans= .99¢
  • spinach= .50¢
  • peppers = $13.96
  • taco seasoning= .25¢
  • black olives= .68¢
  • shredded cheddar cheese = .50¢

Total for entire recipe: $20.99

Total for each serving: $1.75
